Shrimp in a spicy marinade with grilled vegetables is one of the simplest and most delicious dishes. They are juicy, slightly sweet and moderately spicy.
How to cook
Ingredients per serving:
- 5-8 large shrimps;
- 1 onion;
- 2 medium tomatoes;
- 1 eggplant.
Marinade:
- 1 tbsp. l. olive oil;
- half a lemon or 1 lime;
- 2-3 sprigs of rosemary;
- 2 cloves of garlic;
- salt, ground black pepper and chili to taste.
Preparing shrimp
To get great results, you need to be responsible for the choice of ingredients.
Shrimp must be large. Small ones turn out to be drier. It is advisable to buy tiger with a head, as they turn out to be more juicy, but you can take prepared ones, without a head. The main thing is to make sure that the product is fresh.
Frozen shrimp must be thawed. This should not be done quickly in the microwave or under hot water. Better to refrigerate for 10-12 hours.
In thawed shrimp, cut the shell along the back with scissors, make a shallow incision and pull out the intestines. If this is not done, then they will acquire an unpleasant aftertaste. Do not completely remove the shell - it will protect the shrimp from the heat and retain the juice.
Making the marinade
Squeeze the juice out of the lime. Tear off the leaves from the rosemary. In a blender, combine the olive oil, lime juice, rosemary leaves and garlic until smooth.
Chili pepper can be omitted, but without spicy pungency, the taste will not be refined enough.
Put the shrimp in the marinade and refrigerate for several hours.
Getting Started
Melt the grill well. Place shrimp and chopped vegetables on a wire rack. Place a suitable grate on grill stove . If the barbecue has a hot plate, place the shrimp and vegetables directly on top of it. It should be well hot. Do not be distracted in any way, as everything is prepared very quickly. Turn the shrimp over as soon as the shell turns red.
After cooking, place the shrimp on a platter, sprinkle with herbs. The flavor can be enhanced by adding a mild creamy or spicy tomato sauce.
